What is it about fall and cooler temperatures that instantly draws us towards warm, cozy food like this oats and seeds apple oatmeal? Apples often take a backseat to all the rage that is Pumpkin each fall, but they are front and center in this recipe. Apples add a natural sweetness and are a great source of antioxidants.
Fall is in the air! If you’re wondering what to do with all of those apples you collected at your local apple farm, you’re in the right place. I developed this recipe using apples that my 12-year old son and I picked at Grandad’s Apples in Hendersonville, NC. Grandad’s Apples has the BEST apple cider slushies and apple cider donuts. Woweee. I didn’t even know apple cider slushies were a thing until we visited the orchard this season.
Don’t be scared by the nutrition label on this oats and seeds apple oatmeal recipe. The calories, carbohydrate, and fat content may seem high per serving. However, keep in mind that this is all whole food, plant powered nutrition. Not all calories and fats are created equally. The calories, fat, and carbohydrates here are all from good sources, creating energy that your body needs to last throughout the day.

Ingredients
- 1 1/4 cup oats
- 1 can organic unsweetened coconut milk, 13.5fl oz
- 4 tbsp hemp seeds
- 2 tbsp flax seeds
- 2 tbsp chia seeds
- 1 tsp cinnamon
- 1 tsp poppy seeds
- 1 tsp sesame seeds
- 1/2 tsp cloves
- 1/4 tsp cardamom
- 1/4 tsp turmeric
- 2 apples, diced
- 1 tsp maca powder
- 1/2 cup water
- 1/4 cup almond butter
- 2 tsp vanilla
Instructions
- Using a nonstick saucepan, bring coconut milk and oats to a boil over high heat, occasionally stirring. Add seeds and spices along with apples and mace powder. Reduce heat to medium/low and simmer for 8-10 minutes. Stir in almond butter, vanilla, and water. Enjoy!
