Cilantro Lime Rice

Cilantro lime rice is so easy to make and is the perfect accompaniment to any Mexican dish. I love to serve homemade cilantro lime rice with my authentic slow cooker carnitas recipe.

What type of rice do you need for this recipe?

The best type of rice for this recipe is basmati long grain rice. In a pinch, you can use any type of white rice. And really, if you prefer to use brown rice — feel free to knock yourself out. 🙂

Do you need a rice cooker to make cilantro lime rice?

I’ve always wanted a rice cooker, and honestly, I’ve never had one. So you absolutely do not need a rice cooker to excel at this recipe! Any standard saucepan with a lid will do. I love my Cuisinart stainless steel saucepan. You can find it in most stores that carry kitchenware, or also here on Amazon.

Can you use bottled lime juice?

You can use bottled lime juice for this recipe, yes. I don’t necessarily recommend this as it is more expensive than purchasing fresh limes, it lacks fresh flavor, and it really doesn’t save much time. It only takes a minute or two to cut and squeeze a lime. If you are squeezing a lime by hand, I find it easiest to cut the lime into quarters and then squeeze each individual wedge to get the most juice out of your lime. My favorite way to squeeze a lime is with a citrus squeezer. It also may not save much time, however it really helps to extract all of the available juice from the lime without too much effort. How do you serve cilantro lime rice?

Cilantro lime rice can be served in a variety of ways. You can simply scoop it on the plate next to its accompaniments. If you are looking to elevate the presentation style of your dish, I recommend scooping cilantro lime rice with a batter scoop. The batter scoop will present a perfectly rounded mound of rice and has a release lever which helps the rice keep its round shape.

Cilantro lime rice can also be placed on the bottom layer of your plate or bowl with everything else piled on top, kind of like a rice bowl from Chipotle. The rice can also be directly mixed in with the main dish, or added to a tortilla for a burrito.
